8 slices of bread
1 eggplant
three stalks of celery
a handful of pitted black olives, capers
1 packet of tomato sauce 1 cup of vinegar
3 tablespoons sugar 1 onion
salt
oil
Preparation
For this tasty finger food full of wonderful game proposed by Italian atmosphere of the mini sadwich I propose a little unusual, or inside with a delicious farciutra of the Sicilian caponata.
The first thing to do is make the caponata: Cut the eggplant into fairly large bricks and put them in salt. Fry, therefore, the bricks of eggplant a little at a time in hot oil. Meanwhile, in a pan rather capacious, pour the tomato sauce, stretch it with vinegar mixed with sugar and simmer. Add the onion and celery finely diced, and cook 6 minutes. At this point, also add olives and capers and finally the eggplants. Long with a little water, salt and let cook for at least 15 minutes. Let cool for good. Meanwhile, with the help of a pastry rings obtained from the small hard bread. On each placed a spoonful of caponata, close it with another disc of bread and finished with an olive and a piece of celery
